  3. Press this mixture firmly into the bottom of a 22 cm (approximately 9 inches) cheesecake springform pan to create an even layer.

  4. Bake in the preheated oven for 8 minutes until set and lightly golden. Remove and let it cool while you prepare the filling.

For the Cheesecake Filling

  1. In a large mixing bowl, whisk the cream cheese and sour cream or creme fraiche until smooth.

  2. Gradually add the sugar, continuing to whisk until well incorporated.

  3. Beat in the eggs one at a time, followed by the vanilla extract, ensuring the mixture is homogenous and lump-free.
